Maque Choux Salad with Phickles Pickled Okra

It’s officially summer ….and that means lots of fresh vegetables are at the markets and in our back yard. Here’s a quick and easy vegetarian recipe that makes a great side or add a protein containing bean to it (or bacon if you’re a carnivore) and call it a meal.

This recipe is easy to make your own. Change up the measurements to suit your taste and according to the vegetables you have available.
For our recipe: 3 cups cooked white corn (fresh is best but frozen is fine,) 10 of our Pickled Okra, 2 scallions (white and green parts of the stem,) 1 tsp minced garlic, 1 tbsp olive oil, 1 tsp sea salt, 1 tsp black pepper, 4 tbsp pickled okra juice. If you like spicy food…add a whole, sliced cayenne pepper like we did!

20140621-185926.jpg
Slice the pickled okra and place into mixing bowl with the corn.

We decided to slice an heirloom tomato and toss it into our salad…either way is perfect!

Fun Spots of Athens and Pickled Georgia Peanuts

We’ve been all around Athens the last few days making sure all the PHUN spots are well stocked with Phickles for gameday! Whether you’re tailgating on campus or watching the game in an Athens watering hole …there’s a convenient spot to get your Phix of Phickles!

20130906-174445.jpg
The latest spot to add Phickles to their menu is Normal Bar on Prince Avenue. Normal Bar has plenty of parking space in the lot behind Ike and Jane and has a TV to view the game ….and dogs are welcome!

Nona on Broad Street is always a favorite among Bloody Mary sippers and is stocked with a fun mix of all our stuff! Say hey to Neil and enjoy being in an historical resto in Athens. You might know a king or queen of mardi gras in the photos framed on the wall and there are two TVs in the bar area for cheering on the Dawgs!

Don’t be afraid of the heat up on the rooftop bar at the Georgia Theatre located on the corner of Clayton St and Lumpkin Ave downtown. There’s plenty of seats at the shaded bar and under the retractable canopy and the pulled pork tacos crafted by Branded Butcher are ahhhhmazing! And yes, the rooftop bar at the theatre has a TV …so belly up , sip a Phickled Mary and cheer on Georgia!

And if you’re headed to tailgate with friends… You can grab a quickie Phickles Phix at both Five Points Bottle Shop locations…one on the Atlanta Hwy and one in the heart of Five Points. They keep Phickles by the jar in their beer growler sections.

Phickled Peanuts
We boiled peanuts from Hardy Farms with Phickle juice and it’s been a hit! They’re easy to make in a crock pot overnight.

20130906-180653.jpg
Put one pound of green peanuts in a crock pot with 2 pints of Phickle Juice (always save the juice!) Add enough water to cover, put on the lid and set the temp to High. After 3 hours…set the temp to Low and go to bed! When you wake up…you’ve got Phickled Nuts! We also added the pickled garlic, jalapeño, and dill weed from the jar. You really can’t go wrong.
HAVE FUN!!! EAT A PHICKLE! …and GO DAWGS!
