We’ve made these cheesy cookies many times without the pepper jelly center …& they’re delicious either way. But for holiday get-togethers…. the addition of pepper jelly is a PHUN treat!
Here’s the how-to:
1 cup Phickles Brand ‘Southern Charm’ pimento cheese
1 cup sifted All Purpose Flour
2 TBSP Duke’s Mayonnaise (Since our pimento cheese is less greasy than most on the market…adding mayo helps for ease of mixing.)
1/4 Cup Softened or Melted Butter
*Mix above ingredients in a bowl with spatula or like we do…..with hands.
Press dough together into a round ball, wrap in plastic wrap and place in fridge to chill for an hour.
*Preheat oven to 400 degrees.
*Line a baking sheet with parchment paper.
*Using a teaspoon for good measure… Roll teaspoons of dough into balls. Flatten the balls with the bottom of a glass or other flat object. Place 1/2 of the flattened dough rounds onto the parchment paper lined baking pan.
*Add a dollop of your favorite pepper jelly to the center of each flattened round. Then top the rounds with the other half of the dough rounds. Press the edges a bit to seal in the jelly.
*Bake at 400 for 15 minutes.
*Let cool on counter & serve!
These are great cold ….so they are an easy make-ahead treat for parties.
Some jelly will most likely ooze out…but trust me….it doesn’t matter!
