Mother Clucker Fried Chicken Festival – Atlanta 2017

Hey Atlanta Friends! We hope to see y’all at The Stave Room at American Spirit Works Sunday, April 30 from 2-5!

We’re bringing all our pickles to taste and purchase AND our new cheese spreads! If you haven’t had a chance to taste our Hot Mess cheese spread …made with aged white cheddar and our own pickled jalapeƱos… this is your chance!

And… we just got word we’ll be set up right next to our PHriend, Tiffany from Lazy Goat Produce! We love pairing her pepper jellies with our cheese spreads! 

Over 20 Atlanta area chefs will be frying Springer Mountain Farms Chicken in all kinds of yummy ways! We’re looking forward to tasting what D.B.A. Barbecue does with it. We hear they’re gonna smoke the chicken and then fry it…YUM! 


We got a little carried away while painting crates for our table display today and decided to paint one of our paper sacks!

We’re gonna use it at the festival to collect instagram names for a giveaway! So…be sure to stop by our tasting table & drop yours in the bag!

Maque Choux Salad with Phickles Pickled Okra

It’s officially summer ….and that means lots of fresh vegetables are at the markets and in our back yard. Here’s a quick and easy vegetarian recipe that makes a great side or add a protein containing bean to it (or bacon if you’re a carnivore) and call it a meal.

This recipe is easy to make your own. Change up the measurements to suit your taste and according to the vegetables you have available.
For our recipe: 3 cups cooked white corn (fresh is best but frozen is fine,) 10 of our Pickled Okra, 2 scallions (white and green parts of the stem,) 1 tsp minced garlic, 1 tbsp olive oil, 1 tsp sea salt, 1 tsp black pepper, 4 tbsp pickled okra juice. If you like spicy food…add a whole, sliced cayenne pepper like we did!

Slice the pickled okra and place into mixing bowl with the corn.

Slice 2 scallions and add them to the bowl. Then add the sea salt, black pepper, pickled okra juice, minced garlic, Olive oil and sliced cayenne pepper.

This salad is pretty served over a slice of a good tomato….OR

We decided to slice an heirloom tomato and toss it into our salad…either way is perfect!

Modica Market in Seaside, Florida …where the pickles are!

We love getting to visit with the people who own the shops around the south that carry our pickles. Meet Charlie Modica ….owner of Modica Market in Seaside, Florida! Modica Market was the first store outside of our hometown to carry our pickles. We’ll always remember our first time walking into Modica and Charlie’s dad saying: “What ‘cha’ll got?” We said… PICKLED OKRA, BEANS, CARROTS, GREEN TOMATOES, AND JALAPENOS”…and he said: “I’ll take a case of each.” That was in 2009. Charles Modica, Sr. has since passed on…but his son Charlie is carrying on his legacy of keeping it real in Seaside. You might remember seeing this market in the movie The Truman Show with Jim Carey. If you’ve never been to Seaside, Florida…put it on your bucket list. It’s a not-to-miss southern treasure of a town!

Ceviche

We delivered more Phickles to The Healthy Gourmet last week. It’s always fun to take a tour of that store when we do! They’re always sampling things in there. I noticed some almond butter on their sampling table but I stayed clear of it to save my appetite since my husband had his eyes on the Rock Fish. I knew I was in for a yummy supper!
So…yes, we purchased a big piece of Rock Fish from the freezer and made ceviche three ways!

We prepared all the herbs and veggies first. We had cilantro, jalapenos, chives, garlic cloves, Phickles Hotties (pickled jalapenos,) and sweet 100 cherry tomatoes. Luckily, our kitchen garden was full of everything but the garlic and Phickles…but we always have ’em since garlic goes into every pickle jar we make …and our fridge is never empty of Hotties!

We diced 4-5 oz of the Rock Fish.

Then we added 1 Tbsp Cilantro, 1 Tbsp Hotties, 1 tsp Chives, 1 tsp minced garlic, 2 Tbsp Cherry Tomatoes, Juice of 1 lemon, Juice of 1 lime, & 1 tsp black pepper.

We made ceviche three ways… one way was extra spicy with fresh jalapeno and one with a spicy salt we scored during our visit to the Fancy Food Show in D.C.
All you gotta do is mix it all together and let it sit in the fridge for 20-30 minutes and it’s ready to eat. Ceviche done this way makes a nice dip with chips.

Lots of different white fishes can be used in ceviche. We enjoyed Scallop Ceviche at Square One Fish Co. in Athens during Sunday brunch recently. It was prepared with grapefruit instead of the lemon and lime like we used. During our #PhunVenture …we LOVED the Shrimp ceviche at Louis-Louis in South Walton County Florida. Both are phickley spots doing food perfectly! I love knowing about the connection the owners of The Healthy Gourmet has with the fish they sell. They have a fisherman friend in Alaska who flash-freezes fish and ships it straight to Dave and Ann Wells at The Healthy Gourmet. …and from the taste of their fish…I know that is true! So yummy…

Normally, we have ceviche as a small tapa …but this night…we made enough for a whole meal. It’s been HOT in Athens, Georgia ….so a cool, refreshing meal like this is something we crave lately.
