Shindig Sauce is our version of White Alabama Style BBQ sauce that is delicious as a dip for chicken, pork, ribs, French fries, fried shrimp….pretty much everything!
Moppin' Sauce is our Vinegar based BBQ marinade. Marinate meats before cooking, use it as a baste while grilling…and it's delicious as a dip with Cuban Sandwiches and drizzled in salads and over Nachos!
House Pickles are the best Dill Pickles you'll ever taste! Crisp cucumbers…pickled with fresh dill, whole garlic and jalapeño for spice.
Ripe Tomato and Black Bean Salsa -No added sugar is in our delicious salsa. We sweeten it with red wine vinegar and it gets it zing from key lime juice!

We delivered more Phickles to The Healthy Gourmet last week. It’s always fun to take a tour of that store when we do! They’re always sampling things in there. I noticed some almond butter on their sampling table but I stayed clear of it to save my appetite since my husband had his eyes on the Rock Fish. I knew I was in for a yummy supper!
So…yes, we purchased a big piece of Rock Fish from the freezer and made ceviche three ways!

We prepared all the herbs and veggies first. We had cilantro, jalapenos, chives, garlic cloves, Phickles Hotties (pickled jalapenos,) and sweet 100 cherry tomatoes. Luckily, our kitchen garden was full of everything but the garlic and Phickles…but we always have ’em since garlic goes into every pickle jar we make …and our fridge is never empty of Hotties!

We diced 4-5 oz of the Rock Fish.

Then we added 1 Tbsp Cilantro, 1 Tbsp Hotties, 1 tsp Chives, 1 tsp minced garlic, 2 Tbsp Cherry Tomatoes, Juice of 1 lemon, Juice of 1 lime, & 1 tsp black pepper.

We made ceviche three ways… one way was extra spicy with fresh jalapeno and one with a spicy salt we scored during our visit to the Fancy Food Show in D.C.
All you gotta do is mix it all together and let it sit in the fridge for 20-30 minutes and it’s ready to eat. Ceviche done this way makes a nice dip with chips.

Lots of different white fishes can be used in ceviche. We enjoyed Scallop Ceviche at Square One Fish Co. in Athens during Sunday brunch recently. It was prepared with grapefruit instead of the lemon and lime like we used. During our #PhunVenture …we LOVED the Shrimp ceviche at Louis-Louis in South Walton County Florida. Both are phickley spots doing food perfectly! I love knowing about the connection the owners of The Healthy Gourmet has with the fish they sell. They have a fisherman friend in Alaska who flash-freezes fish and ships it straight to Dave and Ann Wells at The Healthy Gourmet. …and from the taste of their fish…I know that is true! So yummy…

Normally, we have ceviche as a small tapa …but this night…we made enough for a whole meal. It’s been HOT in Athens, Georgia ….so a cool, refreshing meal like this is something we crave lately.

After dinner… there were tasty drippings left! So…..

We made a night cap! ….a ‘Phickled Ceviche-Tini!’

We garnished it with a little cherry tomato ….and drank up.
