Egg Salad with Phickles Pickled Carrots

6 Boiled Eggs
1/4 cup Dukes Mayonnaise
1 tsp Dijon Mustard
4 Phickles ‘Stix’ diced
Salt & Pepper to taste

Peel and chop boiled eggs. Add all the ingredients to the eggs in a bowl…mix and put between two pieces of white bread. Or…do like we did and eat the egg salad with a fork and wish for more for a sandwich!

Chicken Salad and Pickle Wrap

Six simple ingredients to a delicious, quick meal for anytime of day. I actually made this for breakfast today…it’s a good balance of carbs, protein, fiber & salty yumminess from the pickles!

I gave a flour tortilla a squirt of Sriracha chili sauce, then layered on arugula, chicken salad, our House Pickles & black pepper.

The chicken salad is available here in Athens at Bell’s Food Store. It’s a recipe from an old Athens favorite …the Five Points Deli …that was a popular spot with locals for many years until it sadly closed a few years ago. Fortunately, we can still get a taste of it by picking up a container of it at Bell’s …a family owned and run grocery store that has all the regular stuff with a large selection of locally-loved food items. Bell’s is also a home to our pickles and the best, fresh meat in town.

Salmon Salad with Pickled Jalapeños and Honey


2 cans Wild Alaskan Salmon, drained & bones & skin removed
3 tablespoons mayonnaise (we used homemade. Dukes brand is our favorite.)
1/2 cup diced celery
3 tbsp capers, drained
1 cup diced Phickles Hotties (pickled jalapeños)
2 tbsp honey (we used honey from Savannah Bee Co.)

Mix all ingredients together and pepper to your likin’.

Serve on a bed of lettuce or with crackers. ENJOY!

Pickled Pot Roast and Gluten Free Gravy

I love coming up with easy recipes for my crock pot …especially when I can use our pickles. This recipe can be made with any of our pickles but I used our pickled sweet peppers. We don’t make these all the time, so if you’ve scored a jar of them from one of the farmers markets or by ordering them to be shipped to ya…you’re in luck!

Put a chuck roast in your crock pot. Pour all the contents of a jar of Phickles over the roast. Add a jar of water. Turn the temp to high and let it be for four hours. Then turn to low for four more hours.

Remove all the meat from the crock pot and set aside. Pour all the liquid (pickles too) into a food processor with a 3oz container of mushrooms. Purée ’til you get GRAVY! There is no need to add any flour …which makes this gravy completely gluten free.

I served the gravy over homemade mashed potatoes with corn on the cob, arugula …& the roast.
